I don’t know about you but I absolutely love the classic pb&j combo! It’s definitely unbeatable. So after some inspiration from other amazing foodies I decided to come up with my own recipe, so here it is along with some instructions below.

You will need:

- 200/240g of self raising flour

- 50g dark brown sugar

- 80g melted butter

- 1 egg

- 1tsp of vanilla extract

- 1/2tsp baking powder

- crunchy pb

- jam of choice

*Please note that they can sometimes come out quite dry if you don‘t add enough jam, feel free to add a mashed banana or two to the recipe!

Instructions:

Add your sugar to a bowl along with the melted butter and stir. Add an egg to your mixture with vanilla extract and mix altogether. Then, add your flour with baking powder into the bowl and mix until it becomes a dough.

Grease your muffin tin (makes 4).

Add half of your mixture and then add the pb and jam. Then, add the rest of your dough to create a sandwich. Add more pb and jam on top of your muffin, do this for the remaining muffins! Bake at 180 degrees for 20mins and enjoy!

I hope you enjoy guys as this is the first of my own recipes I have shared on my blog! Happy baking! Libby x
